Mayonnaise and why you NEVER need to make your own.

Did you know that Mayonnaise is something you can make yourself. It is a very strong emulsion made of egg yolks with some acid in the form of lemon juice or vinegar, and a lot of oil. Once you see the obscene amount of oil that goes in it, you will not want to eat it for a while. There are some helps with emulsification as well. Paprika can be added and helps the oil and vinegar stay mixed. It also makes the mayonnaise slightly pink so…… yeah, kinda weird. 


I haven’t made mayonnaise since culinary school so this video was a bit of a review. It requires using a mixer for quite a while. There are other ways to do this, like using a food processor, but I broke my food processor crushing candy canes for a peppermint sugar scrub, so hand mixer, it was. I have since replaced my food processor, but I am certainly not refilming that video, because it was less than fun. You will find that I have a habit of breaking things, so kitchen gadget creators, send me stuff to test because if it can be broken, I can do it with the quickness. The hand mixer that I have is a Kitchenaid hand mixer. Hand mixers work better than stand mixers for many things, especially if it is important to get to the bottom of the bowl completely. Part of the reason I love KItchenaid is their parts are easily replaceable. So when you break the beaters making too big a batch of chocolate chip cookies, (not that I know this from experience or anything) you can replace the beaters. So after making these 4 batches of mayo, we didn’t even keep them because they tasted odd and looked rather off. I, at one point in my culinary journey, thought it might be fun to make my own mayo all the time. I now know that idea is insanity. This is why the Good Lord invented Duke’s. The only mayo I will ever need, want, or allow in my house. Don’t make your own mayo, it’s just not worth it people.
