Whipped Feta Lasagna

Whipped Feta Lasagna Recipe

Ingredients:

Meat Sauce:

  • 2 Tbsp Olive oil

  • 1 medium onion diced

  • 1 tsp italian seasoning

  • 1 teaspoon garlic powder

  •  teaspoon onion powder

  • ½ teaspoon black pepper

  • 1 Pound ground beef

  • 1 tablespoon minced garlic

  • 2 tablespoons chopped fresh basil

  • 2- 28 ounce cans diced tomatoes (you can use whole as well)

Sauteed Spinach:

  • 16 oz. baby spinach

  • 1 Tbsp olive oil

  • 2 tsp. minced garlic

Whipped Feta:

  • 12 oz of feta cheese

  • 32 oz ricotta cheese

  • 8 oz cream cheese

Other ingredients:

  • 2 boxes oven ready lasagna noodles

  • 16 oz grated mozzarella cheese

Directions

Meat Sauce

  1. Make the meat sauce by sauteing the onion on medium high heat  in olive oil until brown. 

  2. Add the spices and cook until fragrant

  3. Add ground beef and cook until browned.

  4. Add garlic and cook for 1-2 minutes

  5. Add tomatoes, reduce heat to low and simmer until ready for assembly.

Spinach

  1. Add olive oil to the pan and heat on medium high heat. 

  2. Add garlic and saute until slightly brown

  3. Add in spinach a little at a time, stirring constantly until all is added and it is cooked evenly. Set aside until ready for assembling

Whipped feta

  1. Add all the ricotta, feta, and cream cheese to the bowl of a stand mixer with the paddle attachment and mix until well combined.

  2. Switch to the whip attachment and whip until fluffy.

  3. Set aside until ready to assemble.

Assembly

  1. Spray 6 inch half hotel pan with cooking spray.

  2. Add a bit of sauce to the bottom and 3 noodles on top overlapping the edges

  3. Add a layer of sauce, a layer of whipped feta, a bit of spinach, and a bit of cheese and 3 noodles on top.

  4. Add a layer of sauce then 3 noodles

  5. Add whipped feta, spinach, and mozzarella, then 3 noodles.

  6. Add a layer of sauce and 3 noodles

  7. Add remaining feta, remaining spinach, and 3 noodles.

  8. Add remaining sauce, adding extra tomatoes if needed and cover generously with mozzarella.

  9. Cover with foil and a lid if you have one.

  10. Bake at 350°F for 45 minutes covered and an additional 15-25 minutes until brown and crispy.
